Make the paper filter a constant

Place the triple layer over the spout, rinse the paper fully and confirm that the air channel remains open. Use 30 g coffee, 510 g water at 94°C and one filter model for all three trials. The centre position should resemble a medium-coarse grind on this grinder, flanked by one available step in each direction.

Divide the water into a 90 g bloom and three 140 g pours. Begin each pour when the slurry reaches the same marked height. Avoid swirling after the bloom during this map, because fines moved onto the paper wall can overwhelm the difference between neighbouring burr gaps.

Run the Chemex ladder

Start at centre to learn the coffee's normal flow, brew the coarser position second and the finer position third. Note the time at 230 g, 370 g and 510 g as well as the final drawdown. Intermediate splits show whether slowing begins early or only after fines accumulate.

A finish near 4:15 to 5:00 is a practical observation band for this batch size. Do not pour around the edge to push a slow sample through. Bypass at the paper wall changes extraction and hides the setting that caused the stall.

Distinguish useful resistance from a stall

A finer setting can lengthen contact while improving sweetness and aromatic separation. Call it a stall only when the final water level barely falls, fines coat the filter and the cup gains roughness or muddiness. Long time without those companions is not automatically a defect.

The coarse cup sets the other boundary. If it drains rapidly but tastes pointed, transparent and short, the larger particles are not extracting enough. Compare all samples after cooling, when a seemingly clean cup may reveal a hollow middle.

Recover from late drawdown

Open one step when the last 140 g takes disproportionately longer and the finish dries the mouth. Close one step when every pour disappears early and the cup lacks sweetness. If flow varies while flavor and setting do not, inspect filter placement and kettle path before moving the grinder again.

Stop after the chosen setting repeats within twenty seconds and the late phase remains visibly active. Going finer after that point is justified only by a new coffee, batch size or pour plan, not by the wish to reach one exact clock number.

Capture a Chemex flow profile

Log grinder position, filter brand, fold orientation, coffee age, water, temperature, every pour end, split times, total drawdown, wall coating and flavor clarity. Add whether the spout channel stayed open; a sealed spout can imitate the most severe grind stall.

Keep the winning profile beside its batch size. If you double the recipe, build another three-position ladder instead of assuming the same click, since deeper coffee and longer pouring change how fines reach the paper.

Does every slow Chemex need a coarser grind?

No. Check the spout channel, filter seating and agitation first. Change grind when late slowing repeats and is accompanied by fines migration or a worse cup.

Can I use this setting for a larger Chemex batch?

Use it as the new centre, then compare its neighbours. A deeper bed changes flow enough that the original winner may no longer be the best position.
