Fix basket fill and heat first

Fill the basket level with coffee at the chosen reference grind, weigh that untamped dose and reuse the same mass for all trials. Fill the base with the same hot water to just below the safety valve. Keep the burner position and medium-low heat setting unchanged so onset time can reveal grind resistance.

Choose a fine setting that is visibly coarser than espresso, then identify its immediate neighbours. Inspect the gasket, filter plate and valve before starting. Calibration must stop if the pot leaks, the valve is obstructed or brewing behavior appears unsafe.

Observe three stream profiles

Brew the reference, one step coarser and one step finer with the lid open only when the manufacturer permits observation. Start timing when the pot reaches the heat and note the first coffee, the transition to a steady stream and the first pale or noisy sputter.

Remove the pot from heat as the stream turns pale and cool the base consistently. Never tamp the basket or force a finer sample to continue when flow is delayed. The pot's safety instructions take precedence over completing the comparison.

Read onset and the pale stream

A coarse sample often appears early and runs fast, producing a light centre or sharp finish. A useful finer move can deepen sweetness and body while preserving a calm stream. It becomes unsuitable when onset is unusually delayed, flow surges or bitterness rises with a noisy finish.

Heat can imitate every one of those symptoms. If the reference behaves differently on a later run, allow the pot to cool fully and verify water temperature and burner position. Do not correct the grinder from a single overheated brew.

Correct a fast or restricted rise

Move one step finer when coffee starts very early, runs pale and tastes weak despite identical heat. Move one step coarser when onset is delayed and the stream pulses or the cup turns harsh. If the flow spurts from the start, inspect assembly and heat rather than assuming burr gap alone is responsible.

The stopping point is two brews with similar onset, a continuous dark-to-pale stream and no harsh finish. End the session immediately if a finer position changes normal pressure behavior; flavor optimization never justifies unsafe operation.

Record the pot, not just clicks

Log pot brand and size, basket dose, grinder and setting, starting water temperature, burner position, onset, steady-flow time, sputter time, beverage mass and flavor after dilution if used. A click number without pot and heat details cannot reproduce this result.

Recalibrate after replacing a gasket, changing basket size or moving to a different stove. Save the reference and the rejected fine boundary so a future user knows which direction was tested and where normal flow began to fail.

Should Moka pot coffee be ground as fine as espresso?

Usually the safe working range is visibly coarser, but follow the pot and grinder instructions. Never tamp, and move coarser if flow is delayed or abnormal.

What if the Moka pot sputters at every setting?

Hold the grinder still and inspect heat, water level, gasket, filter plate and assembly. Persistent abnormal behavior is not a reason to keep brewing test samples.
