Three measurements, three different questions

pH describes the water's acid–base condition at the time of measurement. Alkalinity describes its acid-neutralizing capacity. Total hardness mainly reflects calcium and magnesium. A single TDS-meter reading does not identify these separate properties, so two waters with similar TDS can behave differently in coffee.

Read the water report before changing the recipe

Look for alkalinity in the supplier's analysis, often reported in mg/L as CaCO3. Compare values expressed in the same units. Bicarbonate in mg/L is not the same numerical value as alkalinity expressed as CaCO3. If the label lists only pH and total minerals, ask the supplier for a fuller analysis rather than guessing.

Compare two waters at the brewer

For a practical comparison, use two safe drinking waters and the same coffee, grinder and dripper. An editorial starting recipe is 15 g coffee to 250 g water at 94°C. Keep the pouring routine fixed and record the drawdown time. Label the cups A and B, taste them at similar temperatures, then repeat with the brewing order reversed. Write down acidity, sweetness and finish before checking the labels. These are proposed steps, not results from a completed Silencio test.

What the comparison can—and cannot—tell you

If the cups differ, you have evidence that the choice of water matters for this setup—not proof that alkalinity alone caused the difference. Different bottled waters also change hardness and other minerals. A sour cup can have other causes, including the beans and extraction. Choose the water you prefer, then adjust the grind separately. For an espresso machine, follow the manufacturer's water specifications: good flavor does not by itself establish protection from scale or corrosion.
